Cafone is a red wine made from Montepulciano grapes. Spontaneous fermentation and maceration in contact with the skins for 10 days in steel tanks. Later refinement in the same tanks. It comes out after a year and a half from the harvest because the tannins and acidity need some time. It is the most docile and drinkable version of Montepulciano desired by Jacopo: shorter maceration, only steel, mature harvest but not beyond. However, it is not a glu glu wine, even here there is substance and flab.
It is recommended to taste it at a temperature of 16/18 ° in tulip glasses. A wine to drink immediately, but it will give the best of itself in a few years time.
Ideal also for the whole meal with the dishes of the earthy cuisine, it is worth trying to accompany the stewed rabbit.
